Create: Naan Pizza on the Grill

The key piece to this recipe is that I used a popular Indian flat-bread called Naan instead of the traditional pizza dough. Naan is both savory and sweet; thin enough that it gets crunchy on the outside and thick enough to carry the weight of extra cheese and toppings. You can find Naan in most grocery stores and the bread comes in different flavors– garlic, onion, whole wheat and plain. Note, if you don’t have a grill, you can use a pizza stone to arrive at the sought-after bubbly, crispy crust.

Recipe for Grilled Naan Pizza:

(serves 4)
2 Naan flat-breads
1 garlic clove
1 medium vadalia onion
1 (16-ounce) ball of fresh mozzarella
1/2 cup parmesan cheese
1 red pepper
10 basil leaves
2 medium red or yellow tomatoes
salt and ground black pepper

Directions:

Brush the entire garlic bulb with 1/2 tsp olive oil and season with salt and pepper. Wrap the bulb with foil and place in a preheated 450 degree oven for 20 minutes or until roasted. Dice red pepper in quarter inch pieces. Toss with 1 tsp olive oil and season with salt and pepper. Wrap the sliced pepper with tin foil and place on preheated grill for 10 minutes over high heat. Dice onion in quarter inch pieces. Toss with 1 tsp olive oil and season with salt and pepper. Wrap the sliced onion with tin foil and place on the grill for 10 minutes. Thinly slice tomatoes, remove the seeds, and set aside. Slice the mozzarella and set aside. Place the Naan on hot grill and heat until there are light grill marks on both sides. Peal the outer layer of the roasted garlic off. Spread the roasted garlic on one side of the naan. Layer the grilled red pepper and caramelized onions on the naan and spread evently. Sprinkle with 1/4 cup parmesan cheese. Layer thin slices of mozzarella and tomatoes. Place pizza back on the grill until the cheese is melted. Top with the rest of the parmesan and fresh basil leaves.

Slice, devour, enjoy!
