Create: Frozen Yogurt — For Breakfast?!

Frozen yogurt is a great summer dessert and mid-afternoon snack, but, what about frozen yogurt for breakfast? The creamy treat is healthy, refreshing, and quick to make– perfect for a grab-and-go breakfast. Unfortunately, most fro-yo chains aren’t open for breakfast. Since one my favorite frozen yogurt phenoms, Pinkberry, doesn’t open until 11:30 am, I decided to create my own frozen yogurt treat, with my choice of healthy and tasty toppings– including fresh fruit and crunchy granola clusters– over the bottom, middle and top of the yogurt! The key piece to this recipe is the frozen yogurt, so buy your favorite brand and start topping!

Recipe for Mornin’ Fro-Yo Parfait

(Serves 2)
1 large banana
2 tsp of cinnamon
1 tsp sugar in the raw
1 cup vanilla frozen yogurt
1/2 cup low-fat granola

Directions:

Pour 1/3 of the granola clusters into the bottom of a chilled parfait glass. Thinly slice the banana. Place the banana  slices in a microwave safe bowl, sprinkle banana slices with 1 tsp cinnamon and 1 tsp sugar in the raw, mix gently, and place the dish in the microwave on medium high for 1 minute. Spoon 1/3 of the hot banana mixture into the glass, so that it coats the granola. Then, add 1/3 cup of the frozen yogurt. Continue layering the glass in this order until ther eare three layers of each ingredient. Top off the parfait with 1 tsp cinnamon. Enjoy! It’s never too early to have dessert.
