Create: Breakfast Burrito with Basil and Goat Cheese

Recipe for Breakfast Burrito:

(Serves 2)

2 8-inch flour tortillas
1/4 cup chopped basil
1 medium tomato
1/2 cup goat cheese with herbs
2 eggs and 2 egg whites
2 tsp skim milk
Nonfat cooking spray 
Sea salt and ground black pepper



In a medium bowl, beat the eggs, egg whites and skim milk. Sprinkle egg mixture with sea salt and ground pepper. Coat a small skillet with cooking spray. Add the egg mixture to the skillet and scramble for 2 minutes over medium heat. In another skillet, warm the tortillas over low heat. Spread the goat cheese over the tortillas, then add the scrambled eggs and chopped basil to the center of each tortilla. Top the eggs with sliced tomato.
