Watermelon was the star ingredient this summer at a number of top-notch NYC restaurants, including Tabla, Gramercy Tavern, and Fatty Crab, according to The Moment. I tried a watermelon, feta and red wine salad at a lovely Italian restaurant in Alphabet City Barbone. I loved the combination of flavors so much that I decided to make it for my sister’s birthday celebration. HUGE success!
Recipe for Watermelon Feta Salad:
2 cups 1-inch chunks watermelon, seeded
1 cup crumbled feta cheese
1/4 cup good-quality balsamic vinegar
1/4 cup chopped basil
In a small saucepan, cook the balsamic vinegar over medium heat until reduced by half and syrupy, about 6 minutes. Remove the pan from the hot stove and let it cool for 5 minutes. In a glass bowl, layer in 1 cup of the watermelon and sprinkle with 1/2 cup feta cheese and some of the chopped basil. Layer in the rest of the watermelon, feta and basil and drizzle with the balsmic vinegar. Serve immediately. Enjoy!
