On the web site for the vegetarian restaurant in the East Village, Dirt Candy, Chef Amanda Cohen shares her beef with vegetarian fare: “Most vegetarian restaurants are lifestyle-driven, not chef-driven, and their aim is to present healthy food that conforms to vegetarian principles, often by serving basic meat recipes with soy products replacing the meat portion of the dish.” Cohen says that her food is all about the vegetables!

Delite In: Asparagus paella for dinner and the hazelnut caramel corn for dessert. In addition to getting your daily serving of vegetables, you will realize it’s okay for vegetables to taste good!
